What if they freeze in the ground?
Mature frozen truffles are written off for gastronomic purposes, but they can be of interest to nurserymen to produce mycorrhized plants if they are of suitable size – more than more than 100 g and confirmed as mélanosporum.
Truffles which have been partially frozen (which is often the case) can be sold in pieces when the frozen part (which is usually ‘veiled’) has been removed by a fresh and clean cut, revealing the marbling (unfrozen part).
